Baked Chicken Spaghetti

 

A dish not only for King’s, but Astronauts as well!

Col. Tom Hendricks (Commander) and Dr. Rick Linnehan (Mission Specialists) members of the Columbia Crew had enjoyed this Special Baked Chicken Spaghetti on several past occasions at the home of the Chef that created this masterpiece and requested that she prepare this tasty recipe for their upcoming mission.

The dish was prepared and delivered to the NASA lab two months prior to departure, then freeze dried and labelled with the stamp of approval from the NASA powers that be!

Because of the strict controlled diets of the Astronauts, the Baked Chicken Spaghetti dish was carefully measured, weighed and analyzed “inside and out”! Several packages were prepared for the two Astronauts who after completion of mission brought back many stories of others on the mission “stealing” their color coded homemade meals while they weren’t looking!

Enjoy this Poultry Recipe that was good enough to go into outer space!

1 – 5-6 lb hen or 2 fryers
Stew until tender with 4 stalks of celery, 3 large carrots, 1-2 large onions. Remove meat from bones, set aside to cool and then skim off fat.

Saute the following in Olive Oil:
2 – Medium chopped onions
2 – Cloves Chopped Garlic
3 to 4 – Ribs of Chopped Celery
2 – Finely Chopped Carrots
1 – Large Finely Chopped Green Pepper

add all the above in a large pot, 8 cups of Chicken Broth either canned or from stew broth above with the following:
1 – Can of Cream of Tomato Soup (or Regular Tomato Soup)
1 – Can of Cream of Mushroom Soup
1 – 4oz can of Mushroom Stems and Pieces
1 – Large Can tomatoes (28oz) Put Through Blender
2 – Small cans Tomato Sauce (8 oz ea)
1 – Small Can Chopped Black Olives
2-3 – Tablespoons of Parsley

Season All With:
Salt and Pepper to taste (don’t be shy)
2-3 – Tablespoons Worcestershire Sauce
2-3 – Tablespoons Chili Powder
2 – Tablespoons Basil
1 – Tablespoon Sugar
1 – Good Dash of Paprika

Add to Large Pot all the chicken peices you have stripped from the cooled off chicken with:
1/2 lb – grated Velveeta Cheese (Spicy if you like a kick)

Boil 12 oz spaghetti until tender

Combine all ingredients and pour into casserole dish or dishes, cover with grated sharp cheddar cheese and bake for about 45 mins at 375 degrees…and enjoy!
